Soil | Sedimentary soil with layers of compact sandstone, known as Werfen formation originated 260 million years ago. |
Vinification | The first fruit selection is made during harvest, which is done manually to preserve the integrity of the grapes. The pressing is very gentle, the yield does not exceed 50%. A very clear must is obtained, which rests for a few hours without the addition of sulfur, then is transferred into used barriques where alcoholic and malolactic fermentation take place, followed by an aging period on the lees for 8 months. |
Tirage and aging | The second fermentation takes place in the bottle with the addition of 24 g/l of sugar, generating a pressure of 6 atm. After aging on the lees for at least 84 months, the remuage begins, culminating with the disgorgement of the bottles. |
Dosage | Extra Brut with a residual sugar of 1.5 g/l. The topping-up is done with the same base wine. |
Production area | The grapes come from a single vineyard on the hill of Pressano, located in Garli at an altitude of about 300 meters, with a north-west exposure. The vines are grown using the Pergola training system and are over 45 years old. The yield in the vineyard is about 80 q/ha. |

Metodo Classico Trento DOC Riserva
Der Blauwal is our classic method Riserva. A single vineyard, a single vintage, and one grape variety. Time is a precious asset: it takes at least 84 months on the lees to convey the complex story of the vintage, the vineyard's identity, and the variety's characteristics into the wine. It’s an Extra Brut with a dosage of about 1.5 g/l. The enveloping taste and structure are due to the maturity of the fruit and the quality of the grapes, sourced from old pergolas. To ensure this complexity is not diluted, the final top-up after disgorgement is done with the same base wine.
