Soil | Sedimentary soil with layers of compact sandstone, known as Werfen formation originated 260 million years ago. |
Vinification | The grapes are pressed whole-bunch with gentle pressing, and the yield does not exceed 60%. Alcoholic fermentation begins in stainless steel tanks and continues in used barriques, followed by an 8-month aging on the lees. |
Tirage and aging | Re-fermentation occurs in the bottle with the addition of 24 g/l of sugar, developing a pressure of 6 atm. After 36 months of aging on the lees, remuage begins, culminating in the disgorgement of the bottles. |
Dosage | Extra Brut with 1.4 g/l of residual sugar. The dosage, as with all our sparkling wines, is done with the same base wine. We maintain a low dosage to preserve the organoleptic qualities of the base wines as much as possible. |
Production area | The grapes come from the Pressano hills at an altitude of about 500 meters. The soils, composed of compact sandstones mixed with gypsum layers, contribute pleasant sensations of fullness and salinity to the wine. The vines are grown using the Pergola training system, have an average age of around 30 years, with a yield of approximately 100 quintals per hectare. |
