SoilSedimentary soil with layers of compact sandstone, known as Werfen formation originated 260 million years ago.
VinificationThe different varieties have slightly different ripening times, which require separate harvesting and vinification. The hand-picked grapes are crushed and macerated for a few hours before being pressed in the absence of oxygen. The must undergoes no sulfur dioxide addition and is decanted for 12 hours before fermentation begins. It ferments in large oak barrels and used barriques, where it remains for about ten months. The different varieties are carefully blended only after this aging period. The wine is usually released two years after the harvest.
Production areaThe average altitude of the vineyards is about 350 meters, with a west and southwest exposure. The soils are of medium texture, with good depth and fertility. Chardonnay and Pinot Grigio are grown using the Guyot training system with a density of about 7,000 plants per hectare, while Pinot Bianco is grown using the Pergola training system with a density of about 4,000 vines per hectare. The average age of the vines is around 35 years.

Other curiosities

This wine is dedicated to a vineyard historically important for our family; a document confirms the purchase of the property in the early 1800s. As suggested by the vineyard - olive tree symbiosis, the name comes from the presence of a centuries-old olive tree that towers above the rows and is located in a temperate zone well protected from the cold northern winds.

It is the first vineyard to sprout in spring and, over the decades, it has consistently delivered the best results. For this reason, we named our most prestigious white wine after it, a blend of three different varieties: Chardonnay, Pinot Grigio, and Pinot Bianco.
