Vinification | The grapes, the result of careful vineyard selection, are destemmed, and the berries undergo further selection on a sorting table. After a cold maceration that can last a few days, spontaneous fermentation begins in an open oak vat. This phase continues for about 30 to 60 days. The wine is then transferred to new and partially used barriques. After aging for at least 12 months, the individual barriques are selected and blended in a large cask where the wine remains for an additional 6 months. Aging continues for another year in the bottle before being released to the market. |
Production area | The vineyard is located near the village of Ceniga, in the Sarca Valley. It lies on flat land with a slight hilly undulation. Combined with the Mediterranean climate of Garda Lake, the heterogeneous nature of the soils - of morainic origin with significant contributions of clay and silt - creates the ideal conditions for Merlot to fully express itself. In the wines, it contributes to the formation of denser tannins, intense and dark color tones, while maintaining a consistently fresh and fragrant fruit character and stable acidity. The vines are trained in the Guyot system with a variable density ranging from 5,500 to 8,000 vines per hectare. |

Other curiosities
The origins of this variety are well-documented in the Bordeaux area, from where it spread to northern Italy towards the late 1800s. In Trentino, Merlot found its ideal habitat and today occupies an area of 570 hectares, making up 6% of the total. It is the second most cultivated red grape variety in the region. Our desire to express the uniqueness of the grapes from the Pivier vineyard convinced us of the necessity to vinify this plot as a single-varietal. Pivier is only produced in the best vintages.
