Vinification | The grapes are hand-harvested and carefully selected. A maceration in the absence of oxygen (reduction) is carried out for about 12 hours, with the final part of the pressing done in oxidation to encourage the precipitation of tannins. The prolonged contact of the skins with the must gives the wine its copper hue, adding complexity to the taste. Fermentation begins in stainless steel and finishes in barrels, where only 10% are new wood. Here the wine remains on its lees for 9 months, during which it also undergoes malolactic fermentation. Primiere is bottled in the autumn following the harvest, and aging continues for another 6 months. |
Production area | Primiere, takes the name from the vineyard and was born from the desire to enhance the uniqueness of the grapes found in the Pressano area. This Pinot Grigio comes from a single vineyard located within the vineyards surrounding the winery. The 20-year-old vines are grown using the Guyot training system, with a density of 7,000 vines per hectare and a southwest exposure. The Pressano hill is a well-ventilated area with a continental climate. The soils are composed of sedimentary rocks rich in limestone, a type of soil known as Werfen layers, which formed 260 million years ago. This soil imparts a significant mineral content to the wine, which lingers in the long finish. |

Other curiosities
This ancient mutation of Pinot Noir, with its reddish skin, arrived in Italy from France at the beginning of the 1800s. Like all grapes belonging to the grand and aristocratic Pinot family, Pinot Grigio has a very compact bunch, reminiscent of a pine cone, from which it takes the name. Compared to other varieties, it requires a lot of care and attention in the vineyard, preferring well-ventilated and cool locations.
