Soil | Sedimentary soil with layers of compact sandstone, known as Werfen formation originated 260 million years ago. |
Vinification | The destemmed grapes are left to macerate for about a week as whole berries. The natural yeasts on the skins help initiate spontaneous fermentation. After pressing, the wine is transferred to used barriques, where it completes fermentation. Aging continues on the lees for 7 months, with periodic bâtonnage and a few rackings. The wine also undergoes full malolactic fermentation. |
Production area | The grapes come from a vineyard planted in the early 1990s, with a more recent section planted in 2001. It is located above the winery in Pressano at an altitude of 350 meters on Werfen soils, a rocky formation composed of compact sandstones. The vines are grown using the Guyot training system, with a density of 7,000 plants per hectare and a southwest exposure. |

A world traveler, successfully cultivated in both historic and emerging wine regions, Sauvignon Blanc has adapted well to the climate of Trentino Alto Adige, capturing the attention of many consumers. Of Bordeaux origin, through its cross with Cabernet Franc, it gave birth to Cabernet Sauvignon—this alone would place it at the top of the pyramid of great international grape varieties. Its intense and easily accessible flavor typically includes descriptors like gooseberry, asparagus, and various "herbaceous" notes. Our quest for the authenticity of this variety led us to vinify Blanc.
